Continuing with the one year celebration of Low FODMAP Life this month, I am highlighting some of the best low FODMAP light lunch recipes on the blog this week. As the weather is getting warmer, I am craving lighter meals and salads.

The vegan chick’n Caesar salad takes a bit of prep time but works for lunches for a few days. The tasty toasts include four quick lunch recipes. The tofu Halloumi works great as a wrap or salad for a light lunch.
